For the zesty peanut sauce:

  • 1/4 cup natural peanut butter
  • 2 tablespoons soy sauce (use tamari for gluten-free option)
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • A pinch of red pepper flakes (optional)

Instructions:

  1. Start by preparing your vegetables. Remove the stems from the kale and chop it into bite-sized pieces. Julienne the cucumber and carrot, and thinly slice the red bell pepper. Chop the cilantro and green onions.
  • To make the zesty peanut sauce, combine the peanut butter, soy sauce, rice vinegar, honey or maple syrup, minced garlic, grated ginger, and red pepper flakes (if using) in a bowl. Stir until smooth.
  • Lay out your tortilla wraps. Divide the chopped kale, julienned cucumber, sliced red bell pepper, julienned carrot, cilantro leaves, and chopped green onions equally among the wraps.
  • Drizzle each wrap with the zesty peanut sauce. Be generous – the sauce is what gives the wrap its kick!
  • Roll up the wraps tightly, tucking in the ends as you go. Cut each wrap in half diagonally.
  • Serve the cucumber and kale wraps immediately, or wrap them in foil and refrigerate for a quick grab-and-go lunch.

For a complete meal, serve these wraps with a side of sweet potato salad or quinoa pilaf. The sweetness of the sweet potatoes or the nuttiness of the quinoa will complement the flavors of the wrap beautifully.

Enjoy this refreshing, healthy, and satisfying vegetarian wrap!
